Cost Controller is responsible for monitoring, analyzing, and controlling food cost, beverage cost, packaging cost, and other operational expenses across the business. The role ensures accurate stock control, recipe costing, variance analysis, wastage monitoring, and proper reporting to support management in maintaining profitability and cost efficiency.
Key Responsibilities
- Monitor and control food cost, beverage cost, packaging cost, and kitchen/operational expenses across all outlets / brands / kitchen operations.
- Prepare and maintain recipe costing, menu costing, and selling price analysis to ensure profitability.
- Conduct regular stock counts, inventory reconciliation, and variance analysis for food, beverages, packaging, and other consumables.
- Review daily, weekly, and monthly consumption reports and identify unusual variances, wastage, pilferage, or over-usage.
- Ensure all stock movements, transfers, purchases, and wastage are properly recorded and supported by documentation.
- Work closely with kitchen, operations, stores, and procurement teams to control costs and improve stock management practices.
- Verify supplier invoices, purchase prices, and cost records to ensure accuracy and compliance with approved rates.
- Prepare cost reports, margin analysis, and management summaries for decision-making.
- Support month-end closing by providing stock valuation, cost reports, and reconciliation data.
- Ensure compliance with internal controls, SOPs, and company cost control procedures.
Candidate Profile
- Strong knowledge of food cost control, inventory management, and stock reconciliation
- Experience in recipe costing, menu costing, and variance analysis
- Good understanding of hospitality, restaurant, catering, or cloud kitchen operations
- Strong analytical, reporting, and attention-to-detail skills
- Proficiency in Excel and inventory / ERP systems
Preferred Experience
- 3–5 years of experience in cost control, inventory control, or finance operations within hospitality, F&B, catering, restaurant, or cloud kitchen businesses
- Experience handling food cost and stock control in multi-brand or high-volume operations preferred
- Degree or diploma in Accounting, Finance, Hospitality Management, or related field preferred
